The City of Edina continues its monthly online discussion on www.SpeakUpEdina.org with a new topic. In February, the City wants to learn more about what people think about the City’s current liquor ordinance. Specifically, the online discussion will focus on the food-to-liquor sales ratio requirement for restaurants with liquor licenses, generally known as the “60-40 rule.” According to Edina City Code, no more than 40 percent of a restaurant’s gross sales can be from intoxicating liquor (Edina City Code Chapter 4, Article III, Sec. 4-77 (3)). During the discussion, the following questions will be asked:  Edina’s restaurants are required to maintain a food-to-liquor sales ratio of 60:40. Some cities around Edina have more relaxed ratios. However, only once has a single restaurant in Edina not complied with the rule in the last 15 years. Should the City revise this ordinance? Why or why not?  What do you think the food-to-liquor ratio should be?  If an establishment violates the current 60-40 rule, it could be fined and if the entity has multiple violations, its liquor license could be in jeopardy. Should Edina keep the ratio, but revise the penalty structure? What do you think it should be? The City’s discussion on the food-liquor sales ratio will be monitored regularly through Feb. 28. Residents, business owners, visitors, or anyone else is encouraged to weigh in on the issues. In January, the City gathered feedback on food trucks. Questions posed ranged from whether or not individuals support food trucks, if there should be protection for brick-and-mortar businesses, what are preferred locations and times, and if there should be licensing.
